- 2 cups zucchini noodles (zoodles)
- 1 cup cauliflower florets

- 1/4 cup fresh parsley, finely chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the cauliflower florets and sauté for about 5 minutes until tender.
- Stir in the garlic powder, salt, and pepper.
- Add the zucchini noodles and cook for an additional 3-4 minutes until they are just tender but still firm.
- While the pasta is cooking, prepare the pistachio gremolata by combining the chopped pistachios, parsley, lemon zest, lemon juice, minced garlic, red pepper flakes, and salt in a small bowl.
- Once the zucchini noodles and cauliflower are cooked, remove them from heat.
- Serve the pasta in bowls and top generously with the pistachio gremolata.
Notes
- For added protein, consider mixing in grilled chicken or shrimp.
- If you prefer a creamier sauce, stir in 1/4 cup of heavy cream before serving.
