Ingredients

  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup granulated erythritol or your favorite keto sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup unsweetened shredded coconut (optional, for decoration)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, baking soda, and salt. Mix until well combined and smooth.
  3. Fold in the sugar-free chocolate chips.
  4. Using a tablespoon, scoop out the dough and roll it into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Flatten each ball slightly with the back of a fork, creating a crisscross pattern. If desired, sprinkle shredded coconut on top for a spider web effect.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
