Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for about 30 seconds, then stir until well combined.
  3. Add the almond flour, egg, Italian seasoning, garlic powder, and salt to the cheese mixture. Mix until a dough forms.
  4. Fold in the sliced pepperoni and Parmesan cheese until evenly distributed.
  5. Using a tablespoon, scoop the mixture and form small balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the bites are golden brown and firm to the touch.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes
