- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/2 cup almond flour
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 cup sliced pepperoni
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for about 30 seconds, then stir until well combined.
- Add the almond flour, egg, Italian seasoning, garlic powder, and salt to the cheese mixture. Mix until a dough forms.
- Fold in the sliced pepperoni and Parmesan cheese until evenly distributed.
- Using a tablespoon, scoop the mixture and form small balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the bites are golden brown and firm to the touch.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For added flavor, try mixing in some chopped jalapeños or switch the pepperoni for cooked crumbled sausage.
- You can also serve these bites with a low-carb marinara sauce for dipping.
