- 1 head cauliflower
- 1 cup cilantro
- 1/2 cup green onions
- 2 cloves garlic
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin

- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Marinate the chicken in olive oil, lime juice, garlic, cumin, paprika, salt, and pepper for at least 30 minutes.
- While the chicken is marinating, prepare the cauliflower rice by grating the cauliflower and sautéing it in olive oil until cooked.
- Cook the marinated chicken in a skillet over medium heat until fully cooked.
- In a blender, combine cilantro, lime juice, garlic, and olive oil to make the green sauce.
- Serve the chicken over the cauliflower rice, drizzled with the green sauce.
