Ingredients

  • 4 pieces chicken thighs
  • 1 head cauliflower
  • 1 cup cilantro
  • 1/2 cup green onions
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


Instructions

  1. Marinate the chicken in olive oil, lime juice, garlic, cumin, paprika, salt, and pepper for at least 30 minutes.
  2. While the chicken is marinating, prepare the cauliflower rice by grating the cauliflower and sautéing it in olive oil until cooked.
  3. Cook the marinated chicken in a skillet over medium heat until fully cooked.
  4. In a blender, combine cilantro, lime juice, garlic, and olive oil to make the green sauce.
  5. Serve the chicken over the cauliflower rice, drizzled with the green sauce.
