Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup powdered erythritol
  • 1/4 cup unsalted butter
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pistachios
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, melt the butter and stir in the cocoa powder and erythritol until smooth.
  3. Add in the eggs, egg yolks, and vanilla, whisking until well combined.
  4. Fold in the almond flour, baking powder, and chopped pistachios.
  5. Grease ramekins and pour in the batter.
  6. Bake for 12-14 minutes or until the edges are firm but the center is still soft.
  7. Let cool for a minute, then invert onto a plate and serve immediately.
