- 1/4 cup coconut oil, melted
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Extra shredded coconut for rolling
Instructions
- In a large mixing bowl, combine the unsweetened shredded coconut, finely chopped pistachios, almond flour, powdered erythritol, and salt. Mix well to combine all the dry ingredients.
- Add the melted coconut oil and vanilla extract to the dry mixture. Stir until everything is well combined and forms a sticky dough.
- Refrigerate the mixture for about 30 minutes to firm up, making it easier to shape.
- Once chilled, use your hands to form small balls (about 1 inch in diameter) from the mixture.
- Roll each ball in extra shredded coconut until fully coated.
- Place the snowballs on a parchment-lined baking sheet and refrigerate for an additional 15-20 minutes to set.
- Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator.
