- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup erythritol or other keto sweetener
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking soda, and salt.
- In another bowl, mix melted butter, egg, and vanilla extract.
- Combine wet and dry ingredients until a dough forms.
- Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet.
- Bake for 10-12 minutes, then let cool on a wire rack.
Notes
- Make sure to let the cookies cool completely to achieve the right texture.
- Store leftovers in an airtight container for up to a week.
