Description

Delicious low-carb pop tart bars filled with your favorite flavors, perfect for a keto diet.


Ingredients

Scale
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup erythritol
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free jam


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, salt, and baking powder.
  3. Add melted butter, egg, and vanilla extract and mix until a dough forms.
  4. Press half of the dough into the bottom of the baking dish.
  5. Spread the sugar-free jam evenly over the dough.
  6. Roll out the remaining dough and cover the jam.
  7. Bake for 20-25 minutes or until golden brown.
  8. Cool before slicing into bars.

Notes

  • Can use different flavors of sugar-free jam for variety.
  • Store in an airtight container for up to a week.
