- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup erythritol
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free jam
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, salt, and baking powder.
- Add melted butter, egg, and vanilla extract and mix until a dough forms.
- Press half of the dough into the bottom of the baking dish.
- Spread the sugar-free jam evenly over the dough.
- Roll out the remaining dough and cover the jam.
- Bake for 20-25 minutes or until golden brown.
- Cool before slicing into bars.
Notes
- Can use different flavors of sugar-free jam for variety.
- Store in an airtight container for up to a week.
