Description

Delicious keto-friendly cinnamon rolls made with pumpkin, perfect for a healthy treat.


Ingredients

Scale
  • 1 cup pumpkin puree
  • 2 cups almond flour
  • 1/4 cup erythritol
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, eggs, almond milk, and melted coconut oil.
  3. In another bowl, combine almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually mix dry ingredients into wet ingredients until a dough forms.
  5. Roll dough out on parchment paper and spread with additional melted coconut oil and cinnamon sugar mix.
  6. Roll into a log, then slice into rounds.
  7. Place rolls in a baking dish and bake for 25-30 minutes.
  8. Let cool slightly before serving.
