Ingredients

- 1 cup pumpkin puree
- 2 cups almond flour
- 1/4 cup erythritol
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, eggs, almond milk, and melted coconut oil.
- In another bowl, combine almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
- Gradually mix dry ingredients into wet ingredients until a dough forms.
- Roll dough out on parchment paper and spread with additional melted coconut oil and cinnamon sugar mix.
- Roll into a log, then slice into rounds.
- Place rolls in a baking dish and bake for 25-30 minutes.
- Let cool slightly before serving.
Notes
- These rolls can be topped with a sugar-free cream cheese frosting.
- Store any leftovers in the refrigerator.
