Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • 4 ounces cream cheese, softened (for frosting)
  • 2 tablespoons unsalted butter, softened (for frosting)
  • 2 tablespoons sugar-free maple syrup (for frosting)
  • ¼ teaspoon vanilla extract (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, mix together the erythritol, pumpkin puree, egg, vanilla extract, and melted butter until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the frosting by beating together the softened cream cheese, butter, sugar-free maple syrup, and vanilla extract in a bowl until smooth and creamy.
  10. Once the cookies are completely cooled, spread a generous layer of the maple cream cheese frosting on top of each cookie.
