Delicious and easy-to-make Keto Rock Cakes, perfect for a low-carb snack.


Ingredients

  • 2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup erythritol
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, baking powder, salt, and erythritol.
  3. Add the softened butter, eggs, and vanilla extract. Mix until well combined.
  4. Fold in the shredded coconut and chocolate chips.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown.
  7. Allow to cool before serving.
