Ingredients

- 2 cups almond flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup erythritol
- 1/4 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, baking powder, salt, and erythritol.
- Add the softened butter, eggs, and vanilla extract. Mix until well combined.
- Fold in the shredded coconut and chocolate chips.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool before serving.
