Description
A delightful keto-friendly dessert featuring saffron and cardamom infused cauliflower rice pudding.
Ingredients
Scale
- 1 cup cauliflower rice (fresh or frozen)
- 1 cup unsweetened almond milk
- 1/4 cup heavy cream
- 1/4 cup erythritol or your preferred keto sweetener
- 1/4 teaspoon saffron threads
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- Chopped pistachios or almonds for garnish (optional)
Instructions
- Prepare the cauliflower rice; if using frozen, ensure it’s thawed and excess moisture is removed. For fresh cauliflower, chop florets into small pieces and pulse them in a food processor until they achieve a rice-like texture.
- In a saucepan, combine the cauliflower rice with almond milk, heavy cream, erythritol, saffron threads, ground cardamom, vanilla extract, and salt. Mix thoroughly to ensure all ingredients are well blended.
- Set the saucepan over medium heat and gently bring the mixture to a simmer, stirring consistently to avoid any sticking to the bottom.
- Once it reaches a simmer, lower the heat to maintain a gentle cook for about 15-20 minutes. Stir occasionally until the pudding thickens and the cauliflower becomes tender.
- Take the saucepan off the heat and incorporate the butter, stirring until it melts completely and is evenly distributed throughout the pudding.
- Let the pudding cool for a few minutes before serving. For a refreshing dessert, chill it in the refrigerator for at least an hour prior to serving.
- Serve either warm or cold, topped with a sprinkle of chopped pistachios or almonds if you wish.
Notes
- Ensure to remove excess moisture from frozen cauliflower rice for best results.
- This pudding can be served warm or chilled, depending on your preference.
