- 4 (6-ounce) salmon fillets
- 1/2 cup macadamia nuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, lime juice, chili powder, garlic powder, salt, black pepper, and cayenne pepper (if using).
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the fillets generously with the olive oil mixture.
- Sprinkle the chopped macadamia nuts evenly over the top of each salmon fillet, pressing gently to adhere.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes before serving. Garnish with fresh cilantro if desired.
