Description
Keto Salted Caramel Tiramisu with Almond Flour Cake is an irresistible dessert that combines the rich flavors of almond flour cake with a creamy mascarpone filling and a delightful salted caramel twist.
Ingredients
Scale
- 2 cups almond flour
- 1/2 cup erythritol (or your choice of keto-friendly sweetener)
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces mascarpone cheese
- 1/4 cup strong brewed coffee, cooled
- 1/4 cup sugar-free caramel sauce
- 1/2 teaspoon sea salt
- Cocoa powder for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the base with parchment paper.
- In a large bowl, mix together the almond flour, erythritol, cocoa powder, baking powder, and salt until evenly blended.
- In a separate bowl, whisk the eggs until fluffy, then incorporate the melted butter and vanilla extract, stirring until smooth and creamy.
- Gradually fold the dry ingredients into the egg mixture, mixing gently until just combined.
- Transfer the batter into the prepared cake pan, smoothing the surface with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan before removing it.
- While the cake cools, prepare the filling by whipping the heavy cream in a bowl until stiff peaks form. In another bowl, carefully fold the mascarpone cheese into the whipped cream until velvety and well combined.
- In a shallow dish, mix the cooled coffee with the sugar-free caramel sauce. Dip each slice of the almond cake into the coffee mixture, letting it soak for a few seconds.
- In a serving dish, arrange the soaked cake slices in layers, alternating with the mascarpone mixture. Continue layering until all ingredients are used, finishing with a generous layer of mascarpone.
- Top the tiramisu with a drizzle of extra sugar-free caramel sauce and a sprinkle of sea salt. Refrigerate for at least 2 hours before serving.
