  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1/4 cup strong brewed coffee, cooled
  • 1/4 cup sugar-free caramel sauce
  • 1/2 teaspoon sea salt
  • Cocoa powder for garnish


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the base with parchment paper.
  2. In a large bowl, mix together the almond flour, erythritol, cocoa powder, baking powder, and salt until evenly blended.
  3. In a separate bowl, whisk the eggs until fluffy, then incorporate the melted butter and vanilla extract, stirring until smooth and creamy.
  4. Gradually fold the dry ingredients into the egg mixture, mixing gently until just combined.
