Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the filling:
  • 1/4 cup almond butter
  • 2 tablespoons erythritol (or your favorite keto sweetener)
  • 1 tablespoon ground cinnamon
  • For the optional glaze:
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon unsweetened almond milk
  • 1 tablespoon erythritol (or your favorite keto sweetener)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, coconut flour, erythritol, baking powder, salt, and ground cinnamon until well combined.
  3. In another bowl, whisk the melted butter, eggs, and vanilla extract until the mixture is smooth and creamy.
  4. Combine the wet ingredients with the dry ingredients, stirring until a cohesive dough forms. If the dough feels overly sticky, gradually incorporate more almond flour until it is manageable.
  5. On a surface lightly dusted with almond flour, roll the dough into a rectangle about 1/4 inch thick.
  6. Spread the almond butter across the dough, ensuring to leave a small margin around the edges. Evenly sprinkle the erythritol and cinnamon mixture over the almond butter layer.
  7. Starting from one end, roll the dough tightly into a log shape. Cut the log into pieces about 1 inch thick and arrange them cut side up on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until they turn a lovely golden brown. Let them cool on the baking sheet for a few minutes.
  9. For the optional glaze, blend the softened cream cheese, almond milk, and erythritol until you achieve a smooth consistency. Drizzle this over the warm twists just before serving.
