Ingredients

  • 8 ounces of mushrooms, sliced (shiitake, button, or cremini)
  • 1 tablespoon of sesame oil
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup of broccoli florets
  • 2 tablespoons of soy sauce (or tamari for gluten-free)
  • 1 tablespoon of chili paste (adjust to taste)
  • 1 tablespoon of sesame seeds
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the sesame oil and olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced mushrooms and cook for 3-4 minutes until they start to soften.
  4. Stir in the sliced red bell pepper and broccoli florets, cooking for an additional 3-5 minutes until the vegetables are tender-crisp.
  5. Pour in the soy sauce and chili paste, stirring to coat the vegetables evenly.
  6. Cook for another 2 minutes, allowing the flavors to meld.
  7. Season with salt and pepper to taste.
  8. Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
