- 8 ounces of mushrooms, sliced (shiitake, button, or cremini)
- 1 tablespoon of sesame oil
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 2 tablespoons of soy sauce (or tamari for gluten-free)
- 1 tablespoon of chili paste (adjust to taste)
- 1 tablespoon of sesame seeds
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the sesame oil and olive oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 3-4 minutes until they start to soften.
- Stir in the sliced red bell pepper and broccoli florets, cooking for an additional 3-5 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce and chili paste, stirring to coat the vegetables evenly.
- Cook for another 2 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
Notes
- For added crunch, consider tossing in a handful of chopped nuts, such as cashews or almonds, just before serving.
- You can substitute the vegetables with your favorites, such as zucchini or snap peas, for a different flavor profile.
