Ingredients

  • 2 medium eggplants, sliced into 1-inch thick steaks
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon sesame seeds
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish


Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, minced ginger, and red pepper flakes.
  3. Place the eggplant steaks in a large dish and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally to ensure even coverage.
  4. Remove the eggplant from the marinade and sprinkle both sides with salt and pepper.
  5. Grill the eggplant steaks for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  6. During the last minute of grilling, sprinkle sesame seeds over the eggplant steaks to toast them slightly.
  7. Remove from the grill and garnish with sliced green onions before serving.
