- 2 medium eggplants, sliced into 1-inch thick steaks
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 tablespoon sesame seeds
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Preheat your grill or grill pan over medium heat.
- In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, minced ginger, and red pepper flakes.
- Place the eggplant steaks in a large dish and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally to ensure even coverage.
- Remove the eggplant from the marinade and sprinkle both sides with salt and pepper.
- Grill the eggplant steaks for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- During the last minute of grilling, sprinkle sesame seeds over the eggplant steaks to toast them slightly.
- Remove from the grill and garnish with sliced green onions before serving.
Notes
- For a smoky flavor, try adding a teaspoon of liquid smoke to the marinade.
- For a sweeter touch, add a teaspoon of erythritol or your favorite keto-friendly sweetener to the marinade.
