Ingredients

- 1 medium onion, chopped
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 eggs
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper; sauté until softened.
- Stir in garlic and cook until fragrant.
- Add crushed tomatoes, cumin, paprika, salt, and pepper; simmer for 10 minutes.
- Make wells in the sauce and crack an egg into each well.
- Cover and cook until eggs are set to desired doneness.
- Garnish with fresh parsley before serving.
