- 1/4 cup coconut flour
- 1/2 cup unsalted butter, softened
- 1/4 cup erythritol sweetener
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together almond flour, coconut flour, salt, and erythritol.
- Add softened butter and vanilla extract to the dry ingredients and mix until a dough forms.
- Roll the dough into small balls and flatten them on a baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- For a chocolate version, add cocoa powder.
