- 1 pound flank steak, thinly sliced against the grain
- 4 cups broccoli florets
- 1/2 cup beef broth
- 1/4 cup soy sauce (or coconut aminos for a soy-free option)
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon erythritol or your preferred keto sweetener
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 teaspoons sesame seeds (for garnish)
Instructions
- In a slow cooker, combine the beef broth, soy sauce, sesame oil, rice vinegar, garlic, ginger, erythritol, and red pepper flakes. Stir well to combine.
- Add the sliced flank steak to the slow cooker, ensuring the meat is well coated with the sauce. Season with salt and pepper to taste.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.
- About 30 minutes before serving, add the broccoli florets to the slow cooker. Stir to combine and cover again to allow the broccoli to steam and become tender.
- Once done, serve hot, garnished with sesame seeds.
