Description

A delicious and easy Keto Slow-Cooker Beef & Broccoli recipe that is perfect for a low-carb diet.

Ingredients

Scale
  • 1 pound flank steak, thinly sliced against the grain
  • 4 cups broccoli florets
  • 1/2 cup beef broth
  • 1/4 cup soy sauce (or coconut aminos for a soy-free option)
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon erythritol or your preferred keto sweetener
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 teaspoons sesame seeds (for garnish)

Instructions

  1. In a slow cooker, combine the beef broth, soy sauce, sesame oil, rice vinegar, garlic, ginger, erythritol, and red pepper flakes. Stir well to combine.
  2. Add the sliced flank steak to the slow cooker, ensuring the meat is well coated with the sauce. Season with salt and pepper to taste.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.
  4. About 30 minutes before serving, add the broccoli florets to the slow cooker. Stir to combine and cover again to allow the broccoli to steam and become tender.
  5. Once done, serve hot, garnished with sesame seeds.

Notes

  • For added flavor, marinate the beef in the sauce for 30 minutes before cooking.
  • You can substitute the broccoli with other low-carb vegetables like bell peppers or zucchini for variety.
