Description

Delicious keto-friendly smoked salmon and cream cheese stuffed cucumber hearts, perfect for a healthy snack or appetizer.


Ingredients

Scale
  • 2 large cucumbers
  • 8 oz cream cheese, softened
  • 8 oz smoked salmon
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Cut each cucumber in half lengthwise and scoop out the seeds to create a little boat.
  2. In a mixing bowl, combine cream cheese, smoked salmon, dill, lemon juice, salt, and pepper. Mix until smooth.
  3. Fill the cucumber boats with the cream cheese mixture.
  4. Slice the filled cucumbers into bite-sized pieces.
  5. Serve immediately or refrigerate until ready to serve.

Notes

  • For a garnish, you can add extra dill or capers on top of each cucumber heart.
  • This recipe can be easily doubled for larger gatherings.
