- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup Spanish chorizo, diced
- 1/2 cup Manchego cheese, shredded
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined and slightly frothy.
- Heat the olive oil in a non-stick skillet over medium heat. Add the diced chorizo and cook for about 3-4 minutes, or until it starts to brown and release its oils.
- Pour the egg mixture into the skillet with the chorizo, tilting the pan to ensure even distribution.
- Cook for 3-4 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
- Once the bottom is set but the top is still slightly runny, sprinkle the shredded Manchego cheese evenly over one half of the omelet.
- Carefully fold the omelet in half over the cheese and cook for another 1-2 minutes, until the cheese is melted and the omelet is cooked through.
- Slide the omelet onto a plate and garnish with chopped parsley before serving.
Notes
- For added flavor, sauté some diced bell peppers or onions with the chorizo.
- Substitute the Manchego cheese with another cheese like cheddar or feta for a different taste.
