Ingredients

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Spanish chorizo, diced
  • 1/2 cup Manchego cheese, shredded
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  1. In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined and slightly frothy.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the diced chorizo and cook for about 3-4 minutes, or until it starts to brown and release its oils.
  3. Pour the egg mixture into the skillet with the chorizo, tilting the pan to ensure even distribution.
  4. Cook for 3-4 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
  5. Once the bottom is set but the top is still slightly runny, sprinkle the shredded Manchego cheese evenly over one half of the omelet.
  6. Carefully fold the omelet in half over the cheese and cook for another 1-2 minutes, until the cheese is melted and the omelet is cooked through.
  7. Slide the omelet onto a plate and garnish with chopped parsley before serving.
