Description

A delicious and healthy Keto Spiced Vanilla Chia Soufflé that is easy to make and perfect for a low-carb diet.


Ingredients

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1 tablespoon coconut oil, melted
  • 1/4 teaspoon cream of tartar


Instructions

  1. In a medium bowl, whisk together the almond milk, chia seeds, erythritol, vanilla extract, cinnamon, nutmeg, and salt. Let the mixture sit for about 10 minutes to allow the chia seeds to absorb the liquid and thicken.
  2. Preheat your oven to 350°F (175°C) and grease a soufflé dish or individual ramekins with coconut oil.
  3. In another bowl, beat the eggs with the melted coconut oil and baking powder until well combined. Gently fold the chia mixture into the egg mixture until fully incorporated.
  4. In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form. Carefully fold the beaten egg whites into the chia mixture, being cautious not to deflate the mixture.
  5. Pour the combined mixture into the prepared soufflé dish or ramekins, filling them about 3/4 full. Bake for 25-30 minutes, or until the soufflés are puffed and lightly golden on top.
  6. Remove from the oven and let cool for a few minutes before serving. Enjoy warm or at room temperature.

Notes

  • For a richer flavor, consider adding a tablespoon of cocoa powder to the mixture for a chocolate twist.
  • Top the soufflé with a dollop of whipped coconut cream for an extra treat.
