Description

A delicious low-carb calzone filled with spinach, artichokes, and cheese.


Ingredients

  • 2 cups shredded mozzarella cheese
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup cream cheese
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix mozzarella cheese, almond flour, egg, baking powder, garlic powder, and salt until combined.
  3. Form the dough into two balls and flatten each ball into a circle.
  4. In another bowl, combine spinach, artichokes, cream cheese, paprika, and Parmesan cheese.
  5. Place the filling on one half of each dough circle and fold over to create a calzone.
  6. Brush the tops with olive oil.
  7. Bake for 20-25 minutes until golden brown.
  8. Let cool slightly before serving.

  • Make sure to drain the artichokes well to avoid excess moisture.
  • You can add additional spices or cheese to the filling for extra flavor.
