Keto Spinach & Shiitake Dumpling Bowls are a delicious and healthy meal option, perfect for those following a keto diet.

- 2 cups fresh spinach, chopped
- 1 cup shiitake mushrooms, sliced
- 1 cup cauliflower rice
- 1 cup shredded mozzarella cheese
- 1 large egg
- 2 tablespoons almond flour
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a large skillet over medium heat, add the shiitake mushrooms and sauté for about 3-4 minutes until they are tender. Add the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed spinach and mushrooms with the cauliflower rice, mozzarella cheese, egg, almond flour, soy sauce, garlic powder, onion powder, sesame oil, salt, and pepper. Mix until well combined.
- Using your hands, form the mixture into small dumpling shapes, about the size of a golf ball.
- In the same skillet, add a little oil and heat over medium heat. Place the dumplings in the skillet and cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides.
- Serve the dumplings in bowls, garnished with sliced green onions and sesame seeds.
Notes
- For added flavor, mix in some grated ginger or chopped garlic to the dumpling mixture.
- You can substitute the shiitake mushrooms with any other mushrooms you prefer, such as cremini or button mushrooms.
