Ingredients

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, pureed
- 1 cup powdered erythritol for glaze
- 2 tablespoons fresh strawberry puree for glaze
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, vanilla extract, and strawberry puree.
- Combine the wet and dry ingredients until smooth.
- Pour the batter into the donut pan and bake for 15-20 minutes, or until a toothpick comes out clean.
- Let the donuts cool before glazing.
- For the glaze, mix powdered erythritol and strawberry puree until smooth.
- Dip the cooled donuts in the glaze and let set before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Feel free to add more strawberries for additional flavor.
- These donuts can be frozen for later enjoyment.
