Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped (in oil, drained)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil, chopped (optional, for garnish)


Instructions

  1. Preheat a large skillet over medium heat. Add olive oil.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Place them in the skillet and cook for about 6-7 minutes on each side, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped spinach and sun-dried tomatoes. Sauté for 2-3 minutes until the spinach is wilted.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Return the chicken to the skillet, spooning the sauce over the top. Cook for another 2 minutes to heat through.
  6. Serve hot, garnished with fresh basil if desired.
