- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped (in oil, drained)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh basil, chopped (optional, for garnish)
Instructions
- Preheat a large skillet over medium heat. Add olive oil.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Place them in the skillet and cook for about 6-7 minutes on each side, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped spinach and sun-dried tomatoes. Sauté for 2-3 minutes until the spinach is wilted.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Return the chicken to the skillet, spooning the sauce over the top. Cook for another 2 minutes to heat through.
- Serve hot, garnished with fresh basil if desired.
Notes
- For added flavor, marinate the chicken in olive oil, garlic, and Italian herbs for 30 minutes before cooking.
- Substitute the spinach with kale or arugula for a different taste and texture.
