Description

A delicious and hearty keto taco soup, perfect for a low-carb meal.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) green chilies
  • 2 cups beef broth
  • 1 cup bell pepper, chopped
  • 1 cup zucchini, chopped
  • 1 cup cauliflower rice
  • 1 cup shredded cheese for topping
  • 1/4 cup sour cream for serving


Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the taco seasoning and cook for another minute.
  4. Add the diced tomatoes, green chilies, beef broth, bell pepper, zucchini, and cauliflower rice.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot, topped with shredded cheese and a dollop of sour cream.
