Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup natural peanut butter (sugar-free)
  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, salt, and baking powder.
  3. In another bowl, cream together softened butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients and stir until a dough forms.
  5. Prepare the peanut butter filling by mixing natural peanut butter until smooth.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and place on a baking sheet lined with parchment paper.
  7. Flatten each ball gently with fingers or a glass.
  8. Bake for 10–12 minutes until edges are firm, then cool on a wire rack.
  9. Spread peanut butter filling on each cooled cookie.
  10. Melt chocolate chips with coconut oil, dip cookies in the mixture, and refrigerate until chocolate hardens.
