- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup natural peanut butter (sugar-free)
- 1/2 cup sugar-free chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, salt, and baking powder.
- In another bowl, cream together softened butter, egg, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients and stir until a dough forms.
- Prepare the peanut butter filling by mixing natural peanut butter until smooth.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on a baking sheet lined with parchment paper.
- Flatten each ball gently with fingers or a glass.
- Bake for 10–12 minutes until edges are firm, then cool on a wire rack.
- Spread peanut butter filling on each cooled cookie.
- Melt chocolate chips with coconut oil, dip cookies in the mixture, and refrigerate until chocolate hardens.
