- 1/2 cup erythritol or another keto-friendly sweetener
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 1 tablespoon lime zest
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- Gently heat the coconut milk and erythritol in a medium saucepan over low heat, stirring frequently until the sweetener is completely dissolved (about 3 to 5 minutes).
- Remove the saucepan from heat and incorporate the fresh lime juice, lime zest, vanilla extract, and a pinch of salt, stirring until well blended.
- Allow the mixture to cool to room temperature, then cover and refrigerate for a minimum of 2 hours, or until thoroughly chilled.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve texture.
- Transfer the sorbet into an airtight container and freeze for at least 2 hours to firm up before serving.
Notes
- For a richer flavor, blend in some coconut cream with the coconut milk.
