- 2 cups unsweetened almond milk

- 2 tablespoons espresso or strong coffee
Instructions
- In a bowl, mix chia seeds, almond milk, cocoa powder, sweetener, and vanilla extract. Stir well and refrigerate for at least 2 hours or overnight until it thickens.
- In another bowl, whip mascarpone cheese and heavy cream together until smooth.
- After the chia pudding has set, layer it with the mascarpone mixture in serving glasses.
- Drizzle espresso or coffee on top of the layers.
- Chill for an additional 30 minutes before serving.
