Delicious Keto Tiramisu Cookie Cups that are perfect for dessert lovers on a low-carb diet.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 tablespoon cocoa powder for dusting


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. In another bowl, cream together the butter and egg until fluffy. Add vanilla extract.
  4. Combine the dry ingredients into the wet mixture and mix until combined.
  5. Press the cookie dough into muffin tins and bake for 10-12 minutes.
  6. Let the cookie cups cool completely.
  7. In a separate bowl, beat mascarpone cheese and heavy cream until thick.
  8. Add cooled coffee and coffee liqueur to the mascarpone mixture; mix well.
  9. Fill the cooled cookie cups with the mascarpone mixture.
  10. Dust with cocoa powder before serving.

  • For a less sweet version, reduce the sweetener.
