- 1 cup almond flour
- 1/4 cup erythritol
- 1/2 cup unsweetened cocoa powder
- 1/2 cup heavy whipping cream
- 1 cup mascarpone cheese
- 1 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a bowl, mix the almond flour, erythritol, and cocoa powder.
- In another bowl, whisk the heavy cream until stiff peaks form. Gently fold in the mascarpone, vanilla, and salt.
- Dip almond flour cake pieces briefly into the coffee and layer them in serving cups.
- Add a layer of the mascarpone mixture on top.
- Repeat the layers until the cups are filled.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For added flavor, you can sprinkle some cocoa powder on top before serving.
- Ensure the coffee is at room temperature before dipping the cake.
