Description

A delicious low-carb dessert perfect for two, combining classic flavors of coffee and mascarpone.


Ingredients

  • 2 large eggs
  • 2 tablespoons granulated erythritol
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy whipping cream
  • 1/2 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder


Instructions

  1. In a mixing bowl, whisk the eggs and erythritol until fluffy.
  2. Gently fold in the mascarpone and vanilla extract until combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the mascarpone mixture.
  5. Dip ladyfingers in cooled coffee for a few seconds, then layer in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat the layers and finish with a dusting of cocoa powder.
  8. Chill in the fridge for at least 4 hours before serving.
