A delicious low-carb dessert perfect for two, combining classic flavors of coffee and mascarpone.
Ingredients

- 2 large eggs
- 2 tablespoons granulated erythritol
- 1/2 cup mascarpone cheese
- 1/2 cup heavy whipping cream
- 1/2 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
Instructions
- In a mixing bowl, whisk the eggs and erythritol until fluffy.
- Gently fold in the mascarpone and vanilla extract until combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture.
- Dip ladyfingers in cooled coffee for a few seconds, then layer in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat the layers and finish with a dusting of cocoa powder.
- Chill in the fridge for at least 4 hours before serving.
Notes
- This recipe is perfect for when you’re craving a sweet treat without the carbs.
- Adjust the sweetness to taste by adding more or less erythritol.
- Make sure the coffee is cooled before dipping the ladyfingers to prevent sogginess.
