Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine erythritol, butter, vanilla extract, and salt over medium heat. Stir until the mixture starts to boil.
- Add the walnuts to the saucepan and stir to coat.
- Spread the walnuts on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, stirring occasionally, until golden brown.
- Remove from the oven and let cool before serving.

- If you want a sweeter toffee, add more erythritol.
