Ingredients

  • 1/2 cup erythritol
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened coconut milk
  • 1/2 cup heavy cream
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract (for the milk mixture)
  • 1/2 cup heavy whipping cream (for topping)
  • 1 tablespoon erythritol (for topping)
  • 1/2 teaspoon vanilla extract (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine almond flour, erythritol, baking powder, and salt. In another bowl, whisk together melted butter, eggs, and vanilla extract. Mix wet and dry ingredients until combined, then spread the batter in the prepared dish.
  3. Bake for 25-30 minutes or until a toothpick comes out clean. Let it cool for about 10 minutes.
  4. Prepare the milk mixture by combining coconut milk, heavy cream, almond milk, and vanilla extract in a bowl. Stir well.
  5. Poke holes in the cooled cake and pour the milk mixture over it. Let it cool completely and refrigerate for at least 2 hours or overnight.
  6. Whip the heavy cream with erythritol and vanilla extract until soft peaks form. Spread or pipe over the chilled cake.
  7. Garnish with fresh berries if desired, slice, and serve chilled.

Notes

  • For a chocolate version, add 1/4 cup unsweetened cocoa powder to the batter.
  • To make it dairy-free, use coconut cream instead of heavy cream.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
