Description

A delicious and satisfying Keto Tuna Casserole that is easy to prepare and packed with flavor and nutrients.

Ingredients

Scale
  • 1 can (5 oz) tuna in water, drained
  • 1 cup cauliflower florets, steamed
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup crushed pork rinds (for topping)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the cauliflower florets until tender, about 5-7 minutes.
  3. In a large mixing bowl, combine the drained tuna, steamed cauliflower, diced onion, and diced celery.
  4. Add the heavy cream and mayonnaise, then sprinkle in the garlic powder, onion powder, salt, black pepper, and paprika. Mix well.
  5. Transfer the tuna mixture to a greased 9×9-inch baking dish and spread it out evenly.
  6. Sprinkle the crushed pork rinds over the top.
  7. Bake for 25-30 minutes, or until bubbly and golden brown. Garnish with chopped fresh parsley before serving.

Notes

  • Use high-quality tuna packed in water for a lighter flavor.
  • Drain the tuna thoroughly to avoid a watery casserole.
  • Steaming the cauliflower should result in tender but not mushy florets.
  • Feel free to mix different types of cheese for added flavor.
  • This casserole can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
