  • 1 teaspoon vanilla extract
  • 1 cup dried apricots, chopped
  • ½ cup water
  • 2 tablespoons lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ cup sliced almonds


Instructions

  1. Preheat your oven to 350°F and grease a 9-inch tart pan with a removable base.
  2. In a large bowl, mix together the almond flour, shredded coconut, erythritol, salt, and baking powder until well combined.
  3. Pour in the melted butter, then add the egg and vanilla extract, mixing until a cohesive dough forms.
  4. Press this mixture firmly into the bottom and up the sides of the prepared tart pan to create an even crust.
  5. Bake the crust for approximately 12-15 minutes, or until it turns a light golden brown. Allow it to cool for a few minutes.
  6. In a saucepan, combine the chopped apricots, water, lemon juice, and ground cinnamon. Heat over medium, bringing the mixture to a gentle simmer.
  7. Cook for about 5-7 minutes, or until the apricots become tender. Remove from heat and let it cool for a moment.
  8. Spread the apricot filling evenly over the cooled tart crust, then generously sprinkle the sliced almonds on top.
