- 1 cup dried apricots, chopped
- ½ cup water

Instructions
- Preheat your oven to 350°F and grease a 9-inch tart pan with a removable base.
- In a large bowl, mix together the almond flour, shredded coconut, erythritol, salt, and baking powder until well combined.
- Pour in the melted butter, then add the egg and vanilla extract, mixing until a cohesive dough forms.
- Press this mixture firmly into the bottom and up the sides of the prepared tart pan to create an even crust.
- Bake the crust for approximately 12-15 minutes, or until it turns a light golden brown. Allow it to cool for a few minutes.
- In a saucepan, combine the chopped apricots, water, lemon juice, and ground cinnamon. Heat over medium, bringing the mixture to a gentle simmer.
- Cook for about 5-7 minutes, or until the apricots become tender. Remove from heat and let it cool for a moment.
- Spread the apricot filling evenly over the cooled tart crust, then generously sprinkle the sliced almonds on top.
- Return the tart to the oven and bake for an additional 10-12 minutes, allowing the almonds to toast and become fragrant.
- Once baked, let the tart cool completely before slicing into wedges.
