Description

A creamy and delicious Keto Vanilla Bone Panna Cotta that is perfect for a low-carb dessert.


Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1 cup heavy cream
  • 1/2 cup powdered erythritol (or your preferred keto sweetener)
  • 2 teaspoons vanilla extract
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water
  • Pinch of salt


Instructions

  1. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
  2. In a medium saucepan, combine the almond milk, heavy cream, erythritol, vanilla extract, and salt. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
  3. Once the mixture is warm, remove it from the heat and add the bloomed gelatin. Stir until the gelatin is completely dissolved.
  4. Pour the mixture into individual serving cups or ramekins.
  5. Refrigerate for at least 4 hours, or until set.
  6. To serve, run a knife around the edge of the panna cotta and invert onto a plate, or enjoy directly from the cups.

Notes

  • For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the mixture before heating.
  • Top with fresh berries or a dollop of whipped cream for added flavor and texture.
