- 1/2 cup unsweetened shredded coconut
- 1/2 cup erythritol or preferred sweetener
- 1/2 cup white chocolate chips (sugar-free)
- 1/2 cup macadamia nuts, chopped
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the almond flour, erythritol, baking soda, and salt.
- Add the melted butter, eggs, and vanilla extract; stir until combined.
- Fold in the white chocolate chips and chopped macadamia nuts.
- Drop spoonfuls of cookie dough onto a lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool for a few minutes before transferring to a wire rack.
