Deliciously rich and buttery, these Keto White Chocolate Macadamia Nut Cookies are a perfect low-carb treat!


Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup erythritol or preferred sweetener
  • 1/2 cup white chocolate chips (sugar-free)
  • 1/2 cup macadamia nuts, chopped
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, erythritol, baking soda, and salt.
  3. Add the melted butter, eggs, and vanilla extract; stir until combined.
  4. Fold in the white chocolate chips and chopped macadamia nuts.
  5. Drop spoonfuls of cookie dough onto a lined baking sheet.
  6. Bake for 10-12 minutes or until golden brown.
  7. Allow to cool for a few minutes before transferring to a wire rack.
