- 1 cup heavy cream
- 4 ounces white chocolate, chopped
- 2 large egg whites
- 3 tablespoons erythritol or preferred sweetener
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
Instructions
- In a saucepan, heat the heavy cream over medium heat until it begins to steam. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
- In a separate bowl, beat the egg whites until soft peaks form, then gradually add the erythritol while continuing to beat until stiff peaks form.
- Fold the egg whites gently into the white chocolate mixture, taking care not to deflate the mixture.
- Add the vanilla extract and nutmeg, gently folding until combined.
- Transfer the mousse to serving dishes and refrigerate for at least 2 hours before serving.
Notes
- Make sure to use sugar-free white chocolate to keep the recipe keto-friendly.
- For an added touch, sprinkle some extra nutmeg on top before serving.
