- 1 1/2 cups almond flour
- 1/4 cup erythritol sweetener
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 8 ounces white chocolate, chopped
- 1 teaspoon vanilla extract
- 1 cup mixed winter berries (such as raspberries, blueberries, and blackberries)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour, erythritol, melted butter, and salt to form a dough.
- Press the dough into a tart pan and bake for 10-12 minutes until golden.
- In a saucepan, heat the heavy cream over medium heat until just simmering.
- Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
- Add vanilla extract and mix well.
- Pour the white chocolate mixture into the cooled tart crust and refrigerate until set, about 2-3 hours.
- Top with mixed berries before serving.
Notes
- This tart can be made a day in advance for easier serving.
