Description
Keto Yuca Mash (Cauliflower Style) makes meal prep easy!
Ingredients
Scale
- 2 cups yuca (cassava), peeled and chopped
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Begin by placing the yuca pieces in a sizable pot and filling it with water until the yuca is fully submerged.
- Heat over medium-high until it reaches a rolling boil.
- Allow it to simmer for approximately 20-25 minutes, or until the yuca is tender enough to be easily pierced with a fork.
- Once cooked, drain the yuca and set it aside to cool slightly.
- When it’s manageable, carefully extract the tough core from each piece.
- In a large bowl, combine the softened yuca with butter, heavy cream, garlic powder, onion powder, and a sprinkle of salt and pepper.
- Mash the mixture using a potato masher or fork until you achieve a creamy consistency.
- For an ultra-smooth finish, you might opt for an immersion blender.
- Taste your creation and modify the seasoning if necessary.
- Serve it warm, garnished with fresh parsley if you wish.
Notes
- For an extra creamy texture, feel free to incorporate additional heavy cream or butter.
- Shredded cheese can also be a delightful addition for enhanced flavor.
- If you’re in the mood for some heat, consider mixing in a dash of cayenne pepper or some sautéed jalapeños.
