Delicious and savory Korean BBQ jackfruit sliders that are perfect for any gathering or meal!
Ingredients

- 2 cans young green jackfruit in water
- 1 tablespoon sesame oil
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/2 cup BBQ sauce
- 1 tablespoon soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 8 slider buns
- 1 cup coleslaw mix
- 1/4 cup cilantro, chopped
Instructions
- Drain and rinse the jackfruit. Remove the seeds and trim the core pieces.
- In a large skillet, heat the sesame oil over medium heat.
- Add the onion and garlic, sauté until onions are translucent.
- Add the jackfruit to the skillet and cook for about 10 minutes, shredding the jackfruit with a fork as it cooks.
- Stir in BBQ sauce, soy sauce, gochujang, and rice vinegar. Cook for an additional 5-10 minutes.
- Meanwhile, toast the slider buns.
- Assemble the sliders by placing the jackfruit mixture on the buns and topping with coleslaw and cilantro.
- Serve warm.
Notes
- Make sure to use young green jackfruit, as ripe jackfruit will not have the right texture.
- Adjust the amount of gochujang based on your spice preference.
