Description

A delicious stack of spiced lamb kofta, fresh tzatziki, olives, and feta cheese.


Ingredients

Scale
  • 1 pound ground lamb
  • 2 teaspoons ground sumac
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/2 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 4 pitas or flatbreads


Instructions

  1. In a bowl, mix together lamb, sumac, cumin, paprika, garlic, parsley, salt, and pepper. Form into kofta shapes.
  2. Preheat grill or skillet over medium heat. Cook kofta for about 8-10 minutes, turning occasionally, until browned and cooked through.
  3. In another bowl, combine yogurt, cucumber, dill, and lemon juice to make tzatziki.
  4. Warm pitas or flatbreads on the grill or in a skillet.
  5. To assemble, place kofta on bread, top with tzatziki, olives, and feta.
  6. Serve immediately.

Notes

  • Adjust spices in kofta according to taste.
  • Serve with a side salad for a complete meal.
