Description
A delicious stack of spiced lamb kofta, fresh tzatziki, olives, and feta cheese.
Ingredients

- 1 pound ground lamb
- 2 teaspoons ground sumac
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- 1/2 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- 4 pitas or flatbreads
Instructions
- In a bowl, mix together lamb, sumac, cumin, paprika, garlic, parsley, salt, and pepper. Form into kofta shapes.
- Preheat grill or skillet over medium heat. Cook kofta for about 8-10 minutes, turning occasionally, until browned and cooked through.
- In another bowl, combine yogurt, cucumber, dill, and lemon juice to make tzatziki.
- Warm pitas or flatbreads on the grill or in a skillet.
- To assemble, place kofta on bread, top with tzatziki, olives, and feta.
- Serve immediately.

- Adjust spices in kofta according to taste.
- Serve with a side salad for a complete meal.
