Ingredients

Scale
  • 1 pound ground lamb
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely diced shallots
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg, lightly beaten
  • 2 tablespoons avocado oil

For the Creamy Mint Sauce:

  • 1 cup thick Greek yogurt
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine the ground lamb, panko breadcrumbs, diced shallots, minced garlic, cilantro, mint, cumin, coriander, smoked paprika, sea salt, black pepper, and the beaten egg. Mix until well blended.
  3. Form the mixture into elongated shapes, resembling sausages, about 2-3 inches long.
  4. In a large skillet, heat the avocado oil over medium heat. Sear the kofta for about 4-5 minutes on each side until golden-brown.
  5. Transfer the skillet to the oven and bake for an additional 10-12 minutes, or until cooked through and juicy.
  6. While the kofta are baking, prepare the creamy mint sauce by whisking together the Greek yogurt, chopped mint, lime juice, onion powder, salt, and pepper until smooth.
  7. Remove the kofta from the oven and serve immediately alongside the creamy mint sauce for dipping.

Notes

  • For an extra burst of flavor, add a dash of cayenne pepper to the lamb mixture.
  • You can swap the lamb for ground turkey or pork if preferred.
