Ingredients

- 1 pound ground lamb
- 1/2 cup panko breadcrumbs
- 1/4 cup finely diced shallots
- 2 cloves garlic, minced
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 egg, lightly beaten
- 2 tablespoons avocado oil
For the Creamy Mint Sauce:
- 1 cup thick Greek yogurt
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon fresh lime juice
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- In a mixing bowl, combine the ground lamb, panko breadcrumbs, diced shallots, minced garlic, cilantro, mint, cumin, coriander, smoked paprika, sea salt, black pepper, and the beaten egg. Mix until well blended.
- Form the mixture into elongated shapes, resembling sausages, about 2-3 inches long.
- In a large skillet, heat the avocado oil over medium heat. Sear the kofta for about 4-5 minutes on each side until golden-brown.
- Transfer the skillet to the oven and bake for an additional 10-12 minutes, or until cooked through and juicy.
- While the kofta are baking, prepare the creamy mint sauce by whisking together the Greek yogurt, chopped mint, lime juice, onion powder, salt, and pepper until smooth.
- Remove the kofta from the oven and serve immediately alongside the creamy mint sauce for dipping.
Notes
- For an extra burst of flavor, add a dash of cayenne pepper to the lamb mixture.
- You can swap the lamb for ground turkey or pork if preferred.
- Pair with warm pita bread or a fresh salad for a delightful meal.
