Description

A rich and flavorful lamb liver mousse enhanced with warm spices that creates a delightful appetizer.


Ingredients

  • 1 pound lamb liver
  • 2 ounces unsalted butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cognac or brandy
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat and sauté the chopped onion and garlic until soft and translucent.
  3. Add the lamb liver, spices, and cognac, and cook until the liver is browned and cooked through.
  4. Transfer the mixture to a blender, add the cream, and blend until smooth.
  5. Pour the mousse into a serving dish and refrigerate for at least 2 hours before serving.
  6. Garnish with chopped parsley before serving.

Notes

  • Serve with crackers or toasted bread.
  • Can be made a day in advance for flavors to meld.
