- 1 pound lamb liver
- 2 ounces unsalted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons cognac or brandy
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat and sauté the chopped onion and garlic until soft and translucent.
- Add the lamb liver, spices, and cognac, and cook until the liver is browned and cooked through.
- Transfer the mixture to a blender, add the cream, and blend until smooth.
- Pour the mousse into a serving dish and refrigerate for at least 2 hours before serving.
- Garnish with chopped parsley before serving.
Notes
- Serve with crackers or toasted bread.
- Can be made a day in advance for flavors to meld.
