Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup sour cream
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced zucchini, salt, pepper, and garlic powder. Sauté for about 5-7 minutes, or until the zucchini is tender and slightly golden.
  2. While the zucchini is cooking, prepare the garlic-dill cream. In a small bowl, combine the sour cream, dill, lemon juice, lemon zest, and minced garlic. Mix well until smooth.
  3. Once the zucchini is cooked, remove it from the heat and let it cool slightly.
  4. Serve the sautéed zucchini warm, drizzled with the garlic-dill cream on top.

Notes

  • For added protein, consider mixing in some cooked chicken or chickpeas.
  • If you prefer a bit of heat, add a pinch of red pepper flakes to the zucchini while sautéing.
