A delicious and healthy dish featuring sautéed zucchini topped with a creamy garlic-dill sauce.
Ingredients

- 2 medium zucchinis, sliced into half-moons
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup sour cream
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic, minced
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced zucchini, salt, pepper, and garlic powder. Sauté for about 5-7 minutes, or until the zucchini is tender and slightly golden.
- While the zucchini is cooking, prepare the garlic-dill cream. In a small bowl, combine the sour cream, dill, lemon juice, lemon zest, and minced garlic. Mix well until smooth.
- Once the zucchini is cooked, remove it from the heat and let it cool slightly.
- Serve the sautéed zucchini warm, drizzled with the garlic-dill cream on top.
Notes
- For added protein, consider mixing in some cooked chicken or chickpeas.
- If you prefer a bit of heat, add a pinch of red pepper flakes to the zucchini while sautéing.
