Description

A fragrant and versatile vegetable broth infused with the vibrant flavors of lemongrass.


Ingredients

Scale
  • 4 cups water
  • 2 stalks lemongrass, trimmed and smashed
  • 1 onion, quartered
  • 3 cloves garlic, smashed
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 thumb-sized piece ginger, sliced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 tablespoon soy sauce (optional)


Instructions

  1. In a large pot, combine the water, lemongrass, onion, garlic, carrot, celery, ginger, bay leaves, and salt.
  2. Bring to a boil over high heat.
  3. Reduce the heat and let it simmer for about 30 minutes.
  4. Strain the broth through a fine mesh sieve.
  5. Add soy sauce if using, and adjust seasoning to taste.
