A fragrant and versatile vegetable broth infused with the vibrant flavors of lemongrass.
Ingredients

- 4 cups water
- 2 stalks lemongrass, trimmed and smashed
- 1 onion, quartered
- 3 cloves garlic, smashed
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 thumb-sized piece ginger, sliced
- 2 bay leaves
- 1 teaspoon salt
- 1 tablespoon soy sauce (optional)
Instructions
- In a large pot, combine the water, lemongrass, onion, garlic, carrot, celery, ginger, bay leaves, and salt.
- Bring to a boil over high heat.
- Reduce the heat and let it simmer for about 30 minutes.
- Strain the broth through a fine mesh sieve.
- Add soy sauce if using, and adjust seasoning to taste.

- This broth can be stored in the refrigerator for up to a week.
