Ingredients

  • 1 large head of cauliflower, cut into florets
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese, plus extra for topping
  • 1/4 cup cooked bacon, crumbled
  • 2 green onions, sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender.
  2. Drain the cauliflower and return it to the pot. Allow it to steam for a few minutes to remove excess moisture.
  3. Add the cream cheese, sour cream, butter, garlic powder, salt, and pepper to the pot with the cauliflower. Use a potato masher or an immersion blender to mash until smooth and creamy.
  4. Stir in the shredded cheddar cheese, crumbled bacon, and half of the green onions until well combined.
  5. Transfer the mixture to a baking dish and sprinkle additional cheddar cheese on top.
  6. Broil in the oven for 3-5 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
  7. Remove from the oven and garnish with the remaining green onions before serving.
