A creamy and delicious Loaded Cauliflower recipe that is perfect for a comforting side dish.

- 1 large head of cauliflower, cut into florets
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese, plus extra for topping
- 1/4 cup cooked bacon, crumbled
- 2 green onions, sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons unsalted butter
Instructions
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender.
- Drain the cauliflower and return it to the pot. Allow it to steam for a few minutes to remove excess moisture.
- Add the cream cheese, sour cream, butter, garlic powder, salt, and pepper to the pot with the cauliflower. Use a potato masher or an immersion blender to mash until smooth and creamy.
- Stir in the shredded cheddar cheese, crumbled bacon, and half of the green onions until well combined.
- Transfer the mixture to a baking dish and sprinkle additional cheddar cheese on top.
- Broil in the oven for 3-5 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
- Remove from the oven and garnish with the remaining green onions before serving.
Notes
- For a spicier version, add some diced jalapeños or a sprinkle of red pepper flakes.
- Substitute the cheddar cheese with your favorite cheese, such as mozzarella or pepper jack, for a different flavor profile.
